Lamb Meatballs, and Broccoli

Ingredients:

  • 1 pound of ground lamb

  • 1 medium sized onion grated

  • 2 eggs lightly beaten

  • 3 cloves of garlic finely diced

  • 1 .5 teaspoons of salt

  • 1 teaspoon black pepper

  • 1/3 cup of fresh chopped dill stems removed

  • 1/3 cup of panko bread crumbs

  • 3 tablespoons for butter

  • juice of half a lemon

  • Grate about a half cup of pecorino romano

Preparation:

  • Mix in all ingredients into the meat buy hand

  • Roll meat into balls about 3x3 inches

  • Lightly grease a sauce pan with oil of choice we used olive oil

  • Allow the pan to get to heat and check that a drop of water dances violently

  • Add meat balls and cook about 3.5 minutes on each side or until the meatball has a nice “crust” on it

  • Steam your brocoli

  • Melt butter, add lemon juice

  • Garnish meatballs and broccoli with grated cheese to your personal delight
