Lamb Meatballs, and Broccoli
Ingredients:
1 pound of ground lamb
1 medium sized onion grated
2 eggs lightly beaten
3 cloves of garlic finely diced
1 .5 teaspoons of salt
1 teaspoon black pepper
1/3 cup of fresh chopped dill stems removed
1/3 cup of panko bread crumbs
3 tablespoons for butter
juice of half a lemon
Grate about a half cup of pecorino romano
Preparation:
Mix in all ingredients into the meat buy hand
Roll meat into balls about 3x3 inches
Lightly grease a sauce pan with oil of choice we used olive oil
Allow the pan to get to heat and check that a drop of water dances violently
Add meat balls and cook about 3.5 minutes on each side or until the meatball has a nice “crust” on it
Steam your brocoli
Melt butter, add lemon juice
Garnish meatballs and broccoli with grated cheese to your personal delight
